CORTEX Ceremonial Matcha Powder, 54 g Kyoto shade-grown stone-ground tin - hero v2, 4K upscale

Ceremonial Matcha Powder - Kyoto Shade-Grown Stone-Ground - 54g Tin, Non-GMO and Vegan

Regular price $49.99
Sale price $49.99 Regular price

Where this matcha comes from, and what that buys you.

One ingredient on the tin, so the whole argument is the leaf, the grinding and the two minutes at the whisk.

Grown in the Shade Near Kyoto

The leaves are grown under shade near Kyoto, which is where this drink was formalized and where the method still sets the standard. Those weeks under cover are what bring the sweet, savory character forward and pull the flat green note back.

Stone-Ground, Not Rushed

Stone milling is the slow way to make matcha powder, and slow is what gets the particle fine enough to hang in water instead of dropping out of it. That is the difference between a smooth jade bowl and a gritty one with sludge in the bottom.

No Starch, No Sweetener, No Blend

Matcha tea powder. No blend, no rice starch, no sweetener, no anti-caking agent and nothing bulking out the weight. The caffeine and the theanine come with the leaf and shift with how strong you whisk it, and no figure is stated for either.

Sift It, Keep It Under the Boil

Bitter, clumpy or muddy matcha usually comes down to two things: powder that went in unsifted and water that was boiling. Sift it, keep the water below the boil, and what you get is smooth and sweet instead of the version that put people off.

For the Morning You Make by Hand

Made for people who want a few minutes of the morning that belong to them and nothing else. It suits anyone whose coffee peaks early and leaves before the day is done, and anyone who has ordered a matcha latte and worked out afterwards that it was mostly sugar.

Ceremonial Is Not a Certification

Ceremonial is a description rather than a certified grade, and no body in Japan or anywhere else awards it. What can be checked sits on the tin: Kyoto, shade-grown, stone-ground, one ingredient. It is a food, a tin of green tea, and no Supplement Facts panel comes with it.

What to Expect

Week 1

Sift, water under the boil, whisk until a thick foam sits on top. The first bowl tells you what you have: vivid jade rather than olive, sweet and savory, with a clean finish and none of the dusty bitterness that puts people off the drink.

The two minutes have found their place by now and you have learned your own strength, a level teaspoon or a heaped one. What the bowl gives you is a start that is level rather than steep, and a calm you can work inside of.

Weeks 2 to 4

Weeks 4 to 8

Here the bowl is doing its steady work: attention that holds its place, energy that stays even into the afternoon, and the whole milled leaf going in rather than a steeping of it that ends up in the bin.

The whisk lives on the counter and the tin is simply part of how you start. Level energy, a calm kind of focus, and two minutes nobody else gets a claim on. This is how your mornings work now.

Frequently Asked Questions

Right here on this page. CORTEX Ceremonial Matcha Powder is sold direct through our own store, which is how the 90-day guarantee stays attached to your order and how we know the tin you receive came from us. Matcha fades with time and light, so a shorter chain between the mill and your kitchen is a greener tin.

Matcha tea powder. That is the entire ingredient list.

  • The plant – Camellia sinensis, the same species as every green tea, grown under shade in the weeks before it is picked
  • The region – Kyoto, Japan, which is where this drink and its method were formalised
  • The grind – stone-ground, which is the slow method, and what makes the powder fine enough to stay suspended in water rather than settle out
  • The grade – stated by our supplier as ceremonial. That word is not certified by anybody, which is covered honestly further up this page

No blend, no rice starch, no sweetener, no colouring and no anti-caking agent. Non-GMO, gluten free, lactose free, corn free, vegan friendly, halal and cruelty free. 1.9 oz, 54 grams to a tin.

This is green tea, so the answer is mostly whatever your doctor already told you about tea and coffee. Three things are worth naming.

  • Caffeine – a bowl of matcha is a real caffeinated drink. That matters if you take medication for blood pressure or a heart rhythm condition, if you are pregnant and counting your daily caffeine, or if you have been told to keep stimulants down
  • Iron – green tea can reduce how much iron your body absorbs from a meal, so if you take an iron supplement or you are managing low iron, leave a gap between the two rather than drinking it alongside
  • Blood thinners – green tea contains vitamin K, which is relevant if you take warfarin, less because of one bowl than because a sudden change in how much you drink can matter

Bring it up with whoever manages your prescriptions and let them make the call.

Airtight, cool, dry and dark, away from direct sunlight and moisture. Matcha is more perishable than people expect: light and air are what turn a jade tin olive.

Once opened, use it within three months for the best of it. Stored properly and unopened it stays suitable for up to a year. Do not use it if the packaging arrived damaged or already open.

The traditional way: sift one scoop, a level teaspoon, into a bowl. Add 2 to 3 oz of hot water at 160 to 175 degrees Fahrenheit, which is 70 to 80 Celsius. Whisk briskly in a zigzag rather than a circle until a fine foam sits on top, then drink it straight away.

The modern way: whisk it with a little water first, then blend or pour it into your milk of choice for a latte.

Two things do almost all the work. Sift it, because unsifted matcha clumps and the clumps are what people mistake for bad powder. And keep the water off the boil, because boiling water is what makes a bowl bitter and acrid. Get those right and there is very little else to learn.

About 27. The tin holds 54 grams and a level teaspoon is roughly 2 grams, so that is the arithmetic rather than a count printed on the label.

Heap the spoon and you will get fewer. For comparison, the standard tin across this category is 30 grams, so this one runs close to twice as long, which is the number worth using when you compare prices.

This is a caffeinated drink, so it is for adults and it is not intended for children.

If you are pregnant or breastfeeding, count it towards your daily caffeine and speak to your midwife or doctor. If you are sensitive to caffeine, start with a level teaspoon rather than a heaped one. If you are managing low iron, or you take a blood thinner or medication for blood pressure or a heart rhythm condition, the notes in the medication question above apply. Keep out of reach of children.
